Animal Butchery Workshop: Chicken

Join an intimate group in the Farm Commons Barn for a two-hour workshop and private dinner on Tuesday, July 11 from 6:00 p.m. to 8:00 p.m. Learn how raising heritage chickens fits into the bigger picture of regenerative agriculture here at Philo Ridge Farm and hear from the experts on how to truss, spatchcock, brine, roast and smoke. Tickets include the class, tastings, drinks, and a family-style fried chicken dinner.

Evening includes an educational demonstration by our friendly and knowledgable in-house butcher team. We'll keep you fed with small bites from the kitchen during class, and then sit down together to enjoy a family-style meal:

  • Buttermilk fried chicken

  • Dirty rice with chicken livers and Creole spices

  • Braised kale with onion, garlic, and smoke chilis

  • Nitty Gritty cornbread with maple butter

  • Marinated tomatoes with garden herbs

  • Spinach salad with crispy chicken skin, lemon, and olive oil

  • Strawberry rhubarb jam cookie

  • And drinks including beer, wine, cider and N/A options
